Improvement and Innovation

The times and methods of delivering foodservice to our Spartan guests have certainly changed since Concessions’ inception in 1946. New opportunities continue to bring new solutions in foodservice delivery. Through investment in technology, facility improvements and human resources, Concessions continues to be the benchmark for other universities.

Prior to 1983, staff for concessions events included MSU employees. Currently, staffing is accomplished through the use of non-profit service groups that represent various groups (church, civic, booster clubs, etc.). In return, these groups receive a percentage of sales at their stands and Concessions has increased their staffing efficiency.

Before 1986, there were no contracted vendors, whereas today, contracted vendors account for a great deal of variety to the Concessions menu. At Spartan Stadium, Munn Ice Arena, and Breslin Center foodservice is provided by Turkey Man, Jersey Giant, Kowalski, Pancheros, Melting Moments and Mr. Pita. In addition, specialty stands such as Coney Dogs, Gourmet Pretzels, Sparty Pizza and the popular Grill Station at Spartan Stadium have been developed to add variety to the menu. Mobile concept carts such as Nacho, Gourmet Pretzel, and Johnsonville Sausage have also been added at Munn and Breslin.
